Help with Croatia Itinerary for August with kids

Hi! We will be traveling to Croatia for the 1st time in August with our kids (ages 10,12). We will have 2 weeks and are leaning towards splitting towards our time between Split, Dubvronik and 1 island- I'm leaning towards Vis or Korkula as I hear Hvar is a bit too party-like for our family and we're looking for pure relaxation of beaches and good food for the island portion. Ideally, we would like to avoid renting a car all together. Any help with the following questions would be appreciated.
1) Which island is best for a family who loves to explore, walk a ton (we're new yorkers), good food and wine, good beaches?
2) How many nights do we need for Split and Dubrovnik (and we would love to throw in some day excursions while we're in both cities)
3) Do you recommend staying on hotels or apartments?
4) any other islands that you would recommend that would not be too far to get too, but might be a little less crowded, more off the grid?
5) what is the best travel itinerary for the 2 weeks?

your route is perfect.

Private accommodation is more popular in Croatia than hotels. Croatian hosts are ready to take extra miles for you. I will give you few tips about Croatian hosts: 1. they like clean and tight place. Do not leave mess after you. 2. stick to the deal. Croatians do not fool around. 3. accept the standard they offering you! maybe can happen that you don't like it, but you need to know for them is the best what they have. You need to know that you are dealing with the owner not with the worker. So take your time and listen to him. Don't put you demanding list on what he dont have and He will be happy to show you around for free. Maybe free diners..

Rooms and apartments you can search on Airbnb, hostelworld and booking.com. Or organic search by Google maps. Zoom it and see what is around.

I dont sugest car for Split - Vis - Hvar - Korcula - Dubrovnik route. It will take to much of your time and money. Best route for you will be: one day in split, jump to vis for couple of days, back to Split, jump to Korcula where you can spend week visiting vela luka, proizd, peljesac, badija, mljet.. and Dubrovnik. Catamarans are best option. Krilo.hr or Ec-air.eu.
