I have been looking at transportation options from Florence to Dubrovnik on May 29, 2019 I don't want to rely on the ferry, and it takes too long anyway. It looks like the fastest/cheapest option is to just go back to Rome and get a direct flight. Am I missing any more efficient options?

Or you can take a connecting flight. If overall trip time is less than training back to Rome first, then it may be worth it.
Lufthansa connecting in Frankfurt could be faster but may not be the least expensive, plus it arrives late afternoon. Early flight or train to FCO to catch the late morning Croatia Air flight might be your best option. You could also check the low-cost carriers flying out of Pisa or Bologna, but I don't think they fly to Dubrovnik, at least not in May.
