Dubrovnik is a tourist … ehhh …, let’s say “destination”. So why have I been back three times? Because for what it is, it’s sweet. You didn’t say when you were going, but that would only make me more or maybe less jealous … and maybe give me ideas for your day 3. You only have two real days in Dubrovnik and anyone that only has two full days in Dubrovnik and goes anywhere else doesn’t share my interests.

Some thoughts. But I am no expert. You would have to spend more than the 7 days i have and know a little more about yout interests and the dates to begin to be truly helpful.
Day 1 Gradska Kavana Arsenal Restaurant for dinner and wander the streets and enjoy the lights (well, this is time of year dependent)
Day 2 Splurge for a tour. I like Nera Pavlovic, [email protected], https://www.linkedin.com/in/nera-pavlovic-b2186873/ (PM and I can give you a whatsapp number). I think you will get a lot out of it. Then maybe one of the sunset cruises. Look for a private sailing yacht.
Day 3 I have several ideas, but they are time of year sensitive. But the Posat Restaurant for dinner is always a good idea.
Now, if you are spending more than a night in Split, then you move another night to Dubrovnik and you visit Cavtat … well you could do that on Day 3 too, but … when are you going? For me Cavtat beats visiting something like Lokrum. Admittedly I have never been but for what it appears to be, there are better locations of that nature, while Dubrovnik and Cavtat are among the best of what they are.
Hey, have you ever done olive oil tasting? Oddly enough, it's interesting.
