We will be in Dubrovnik over a weekend and want 1 day in the town, 1 day driving to Mostar, and 1 day taking a boat to Hvar or similar. Which trip is better/worse on a Friday, Saturday or Sunday?

Even if ferry schedules are similar every day, those schedule options may still be the strongest deciding factor in date of travel and whether you go to Hvar or a closer island. If you can get a schedule of how many cruise ships will be in Dubrovnik each day, you could get out of town on the busier days. Most sites in Dubrovnik are open daily and Rick's overview list (p. 316 of Croatia/Slovenia book) doesn't show any closed on those days of the week. In Mostar, the Museum of Herzegovina (not a starred site) is closed Sundays.
