Your pace is a bit fast. Are you used to a pace this quick?

Other than that, your basic itinerary is fine. Be advised that Plitvice gets very crowded mid-day with tour groups, so if driving from Sibenik to Rovinj, you're likely to have encounter a lot of people. It's really better if possible to stay over at the park so you can get into the park at 7am when it opens, when it's not crowded for the first few hours.

You could stay over in Kobarid or Bovec, but many people drive do the the Julian Alps + Soca Valley as a long one day drive.

Also, know that renting a car in Croatia and returning it in Slovenia generally incurs a steep one-way drop fee, so be prepared for that - or look for an alternative like dropping the car in Croatia, taking public transportation or a transfer service to Slovenia, and renting a second car.

Please heed Andrew's advice about Plitvice. It is seriously not good to see the park during the hours you will be there if you plan to day-trip in. It is not remotely the same experience you can have by spending the night in or near the park.
