We are renting a car in Dubrovnik to return in Zagreb March 10 - 8 and we want to see as much of Croatia as possible. We know that March is not the ideal time for touring not only because of weather, but also because there are limited hours for sights as well as businesses that close during the winter. We enjoy wine and want to visit Peljesac and Istria wine regions. Does anyone have any suggestions of a driving itinerary that includes wine plus the other points of interest like Plitvice etc? Is there anything to absolutely skip at that time of the year?
I don’t think you have time for Istria, but Dubrovnik-Peljesac-Split-Plitvice-Zagreb is doable with a week. Depends on how much time you like to spend per place and how much driving you wish to do.
You could perhaps drop Split and/or Plitvice and pick up another wine region.

Might be helpful to see how my wife and I used our time during a Croatia visit (with car) in 2017, starting in Dubrovnik, then Split (via the Peljesac Peninsula) , Plitvice Park, and Istria. The trip report is posted in 3 parts in the Rick Steves forum at the below link. Note that though we took a ferry from the Peljesac Peninsula, a bridge is now available. https://community.ricksteves.com/travel-forum/trip-reports/croatia-road-trip-aug-2017-dubrovnik-and-drive-to-split
Thank you!! valadelphia and GeoffB I realized typing fast I missed the 1 before the 8 : )... We will be in Croatia for 8 days and nights. Thank you for the great info. I guess our other concern is winter hours and closures. Thank again for the info!!
