14 day Itinerary late Oct - delete Korcula / island time?

We are traveling Oct 19 - Nov 2 with a 12 and 14 year old who are great travelers. For ease, I’d like to use the Rick Steves “best 14-day Slovenia and Croatia (by car)” itinerary. However, that itinerary includes 2 nights in Korcula. Also, generally I like a slower pace (3+ nights when possible). My questions:

1) Should we skip Korcula given the time of season? Many people say October is great, but I notice most are meaning earlier in the month. Is this such a beach-heavy place that it will be shut down? Not much to do if you don’t swim due to temperature? (We were in Sicily in early April and faced a similar thing - no point being on beaches because it was a bit cool, but mostly because it was all shut up. We enjoyed museums and historic sites instead.)

2) If we skipped Korcula, where would you slow down (instead of adding something else, I’d rather slow down the existing itinerary). We love history and museums but also outdoors - hiking, biking. Should we spend longer at Plitvice?

We enjoyed Korcula and didn’t spend much time on beaches. We went there late April. The town is very charming and there are many wine cellars that you can visit.

The average high sea temperature in Korcula in October is F71 degrees and in November it’s F67 degrees. On a sunny 80-degree day that might be refreshing, but on cooler days, that is likely to seem chilly. In October the average daytime high temperature is F66 degrees and in November it is F59 degrees. Korcula Town has very few beaches— you swim from the steps leading from the promenade down to the water. Most sandy beaches are found a few miles away from town. You also can visit wineries on the island.
Korcula town won’t shut down with the end of high season, however, you might find Hvar Town on the island of Hvar has more to offer: hiking to Hvar’s castle above the town, taking the bus to Stari Grad which is one of the oldest continuously-inhabited towns anywhere on earth, take a boat to one of the Pakleni islands offshore.

I just looked at the itinerary. A few suggestions
Add a night to Ljubljana.
Haven’t been to Socca Valley, can’t comment.
Don’t miss Postonja Caves and Predjama Castle (we were there today)
Add a night to Istria
Skip opatja, overrated.
Add šibenik as a stop. (We’re going there tomorrow) or Zadar, which is so-so.
Add a night to Split and day trip to Klis and Trogir.
Stop in Ston to see and walk up the Great Wall of Croatia.
Or
Add a night to Dubrovnik.

Skipping Korčula is fine, it is a pain cause you would have to park your car in Orebič and take the ferry.

Any of these towns could use a third night. You can always find something to do.

An update - we were in Šibenik today. Not a fan. It was too chaotic and too many steep steps. Zadar is better laid out and completely flat. Also, the parking was easier in Zadar.
