Will be docking there with RC cruise. Best advise on what to se?, should we do the cable car tour? Maybe nice place to have lunch. will be docking at 10am and back on boat by 8pm
The cruise ship docks are at the other end of Dubrovnik from the old town. Obviously if you
have not wandered the old town, you should plan to do that. If you want to walk the walls,
buy a Dubrovnik Pass - it's the same price as the ticket to walk the walls and you get some
other stuff thrown in.
I think the cable car is more for the view than anything else, so sure, why not, but also there
are other ways to get the view (hike or take the bus).
With so little time, I would hire a guide so you can make the best of it. I've used this individual a few times. Always went well.

The old town should be very busy... maybe to explore Lapad Uvala or the country (like Ston, Peljesac)
Not knowing the time of year or day of week or how many other ships will be there, it's impossible to comment on how busy old town will be. But doesn't matter. SEE Dubrovnik Old Town. It is one of the reasons you took the cruise. ! It is worth it, but that could be half your time, the other half the guide can show you something special.

Your logic is generaly fine, just our streets and tourism according to what happends makes it almost irrelevant Whatever time of day, day of week - it will (probably) be busy (old town)
If your ship is docking it will probably be in Gruz. If iso and it is a nice day, it is a short walk to the Old Town. It is a lovely walk and shouldn’t take more than 20 minutes. We’ve done it a few times. You can talk a cab back. Then before entering the old town through the Pile Gate, walk to your right and see the beautiful views.
Enter through the Pile Gate and just wander around. The TI is just past the fountain and they may have some info about happenings you could fit in your day. Definitely walk the walls. If you don’t want to walk the entire wall due to time constraints, you can exit near the Maritine Museum. There will be a a small, manned booth so you can’t miss it.
To reach the cable car you have to exit the old town through the Ploće Gate and walk up a slight hill, past the firehouse. The entrance is on the right. I’m sure you’ll see it by the long line, or maybe you will be lucky and get there before the crowds. There is a cafe at the top.
If your ship is anchoring off shore and you will tender in, it will most likely be in the opposite entrance.
