I am a teacher and I am traveling to Europe this July with my two middle school age children. Is it worth the $20 ea to get the ISIC & ITIC cards for our trip? Any insights about using this card? Any information would be greatly appreciated.

Their web site has a search engine to help you know what sites accept the cards. It can vary quite a bit by country, as can free admission for kids, but your kids under 18 are free at state-run museums in France and Italy, for instance. (And everyone's free at state-run museums in Britain.) The "Student" category is primarily for older students.
