Our current travel plan involves visiting Mostar on a Saturday. Are shops and businesses open on the weekend? Any concerns with religious observances and shops / restaurants closing early, or having limited hours? We will be traveling in June.

Leslie, most business are open all weekend long, especially in Summer as is when they have most customers. For sure everything will be open on Saturday, in most places is like another working day.
Muslim day of rest is on Friday, luckily not Saturday. (In Turkey or Morocco, many Muslim shop owners only close for an extended lunch hour.)
Yes and in Bosnia and Herzegovina it doesn't play any importance the so called ''rest'' on Friday. Everyone works whole day as usual.
