Rick shows whirling dervishes in his TV episodes about Turkey, etc. that are recorded at performances created for tour groups. If you are interested in getting a sense of what contemporary dervishes actually practice, there is a documentary film (available on Prime and other services) from 2002 by the movie director Aryana Farshad who was given unusual access to ritual practices in Kurdistan and other locations.
Mystic Iran: The Unseen World
gives an intro to mystical practices not usually recorded, including some women dervishes during ecstatic experiences.

Farshad studied at the Sorbonne and the USC film school and has lectured at The British Museum of Arts, LA County Museum of Arts, UC Berkeley, Stanford University, Fes Sacred Music Festival in Morocco, Parliament of the World Religions in Barcelona, and the Gene Siskel Film Center in Chicago.
I think it's useful to watch this film beside Rick's special on Iran that he filmed in 2008.
