Tasmania itinerary

We have 8 nights for Tasmania within a month + trip to Australia. After a few days in Sydney, five days in Melbourne (Aussie Open) and ten days traveling Victoria, we will fly from Melbourne to Hobart and pick up a car. From Hobart, we will fly to Sydney for 3 nights in the Blue Mountains and 3 nights in Sydney. We don't mind "road trips" vs. "bases". There is a lot we'd like to see in Tasmania, yet we want to be careful of spending too much time in a car. Our areas of interest are as follows:

*Port Arthur/Tasman Peninsula, husband is interested in the prison, I'm interested in the scenic areas, so that's complicated. We will likely stay in the Eaglehawk nest area.
*East Coast, mostly views along the way including Bay of Fires. Would like to hike up to Wineglass Bay view point.
*Cradle Mountain/St. Clair National Park. Waterfalls, views, "Shortish" hikes (about 3 miles or less)
*Mt Field National Park, Tall Trees hike, Waterfalls
*wine tasting at some point
*Day in Hobart

Working itinerary:
*Fly into Hobart, pick up car and drive to Tasman Peninsula, 1 Hour, 2 N
*Drive to Scamander, stopping for views, short hikes, 2.5 hour, 1 N
*Drive to Launceston, via drive up coast to Bay of Fires, then A3 or A4?? into city, 4-5 hours, 1 N
*Drive to Cradle Mountain, stay near visitor center, possibly see gorge near Launceston, 2 hours, 2 N
*Drive to Hobart, stop for waterfalls/tall trees in Mt. Field, A5 or A10?? , 5.5 hours, return car, 2N

Hobart Airport to Mt Field Nat Park, 1.5 hours, 1 night
Westerway to Cradle Mt, 4.5 hours, 2 nights
Cradle Mt to Scamander, 3.5 hours, 1 night
Scamander to Tasman Peninsula, 3.25 hours, 2 nights
Tasman Peninsula to Hobart, 1 hour, 2 nights

I feel like I'm a day short for Tasmania, though we've already dedicated 8 nights to Tasmania. I could take a day from Sydney, and just have 2 nights at the end of the trip. I don't think I want to take a day from Blue Mountains?? Not sure what to give up if anything.

We will try to book our flights to and from Tasmania mid day, to early afternoon.

Also, random, can anyone recommend eSIM for Australia? Something that covers Sydney/Melbourne and Tasmania well?
