St. Croix week and St. Thomas layover

Hi everyone, I'm headed to St. Croix next week. Does anyone have any recommendations for things to do, or good resources for such information? There seems to be less out there on St. Croix given its less populated/less touristy status.

I'm especially interested in restaurant recommendations (no particular budget limitations, willing to spend a lot on great food but also happy at a hole-in-the-wall type place) and information on where to hike in the rainforest. We already have an excursion to Buck Island planned for snorkeling. Some members of the family are interested in the more adventure-y type activities (e.g. parasailing and hang gliding), so if anyone has had good experiences with a particular company offering these activities, that would be helpful information. I'm also interested in touring the Cruzan Rum Distillery--if anyone has had positive or negative experiences with that, let me know!

Last, I have a five hour layover in St. Thomas on my way home. Is that enough time to leave the airport, and if so, any suggestions for how to pass a few hours? Otherwise, maybe I will change my flight.

You should have time in St. Thomas to go into Charlotte Amalie. We've never been but are headed there a week from today so my opinion is based on research. Hope you're having a great trip!
