Where can we find out whether a road is paved or not? And whether the road is entirely paved, and which stretches are not? It’s difficult/not possible to find it out from Google maps.
look at a real paper map and the difference will be much clearer. Different publishers use different symbols for different types of roads. Look at the key - usually in a corner of a sheet map, on an introductory page of an atlas.
Be sure you have the right scale. Maps which show a large area only show major roads, you need to zoom in like in Google, but using the best scale for what you are looking for.
That said, the world is a big place and you haven't given any clues as to where you are looking to find information for.
Jeep roads in Colorado will be different to mountain roads in Punjab.

Also try Google Street View. Its is surprising how many obscure roads are photographed.
Google satellite view could be another resource. The similar, but more detailed Google Earth product could be even better.
