I am looking for tour group company recommendations that:
1) will not jam pack a day with sites.
2) will NOT force the shopping stops.
3) will cater to a slower pace to enjoy

Not sure this is a great time to visit China. We did it in 2011 and it was great.

You might look at Road Scholar. Their trips do not have shopping stops. I have not traveled to China with them so can't vouch for whether the days are overloaded or not. I suspect not based on my travels with them to Europe. They also list an activity level so check that to see if it meets your idea of what pace you want.
