If you are used to planning your own trips in Europe or other countries, you can easily plan your own trip in Israel too. You might scope some offered organized tours to see what itineraries others choose. But then decide on your own based on what interests you. We did Jerusalem, Nazareth and Tel Aviv in 9 days on our own. But there is much more you could do. Travel around Israel is easy. Israelis are big travelers in their own country. We rented a car from Jerusalem and returned it in Tel Aviv. We did one organized tour in Jerusalem lead by the city or maybe it was the tourist office. We also did one tour from Jerusalem by taxi to go to Bethlehem. Otherwise the religious sights, historical sights and museums we did on our own or from walking tours we found in books or on line.
We had a great tour booked with Gate 1 tours for earlier this year, but had to cancel since foreign tourists were blocked from entry due to COVID19. That has changed now.
Wanting to go in a this month, you might not find a tour for the entire trip, but have to book day trips from places like Jerusalem.
You might want to consider these companies for one-day tours: Guided Tours Israel, Ben Harim Tours, and Abraham Tours. It is relatively easy to center yourself in Jerusalem and walk or taxi to sites. We have used Guided Tours Israel in the past and were very pleased. We have tours booked with them and Ben Harim next month.
