I read previously that Israeli law requires that everyone must carry ID and, for tourists, that's your passport. Is a copy sufficient or should we have our actual original passport on hand?

The actual passport. Keep it safe in a money belt, neck pouch or similar safety device under your clothing, but still accessible if needed. A photocopy is not an official document.
