How much do you want to see? How fit are you? How much can you handle the heat? You'd need a week to see it all - but most people are templed out before then. I actually like Phnom Penh as well - at that has a number of sights including the royal palace and the killing fields museum (if you can handle it - I couldn't too close ). We did an amazing overland bus ride along the southern coast - but that was back 20 years ago and I know that area has changed a lot so can no longer recommend.
Three nights is perfect. We also enjoyed Phenom Penh and found The Killing Fields and Genocide Museum sobering, all done to their own people. Our guides never knew the truth until they were grown and learned about the killings of the Cambodian people.
10 years ago I did a Mekong Cruise/bus trip from Saigon ending in Siem Reap where we spent time exploring temples. We spent five nights in Siem Reap, hired a tuk tuk with a driver guide and spent mornings exploring the temples. We arrived at Ta Phrom, the tomb raider temple, early and had it to ourselves for most of our visit which lasted until lunch time. In fact apart from Angkor Wat itself we tried to get most temple visits in the morning, it was slightly cooler. Other temples, Bayon was my favourite, we often returned to after lunch. The temple of Angkor Wat is huge and we spent most of the day there. You can do a tethered hot air balloon ride at sunset which gives great overhead views of the temples, or take an elephant ride up a nearby hill. One day we visited a silk farm and factory on a trip organized by a local artisan company called, I think, Artisans of Angkor. We also enjoyed some of the many interesting restaurants around town and out in the Temple area, oh and the Night Market.
Cambodia was very interesting and the people were great. They were still suffering from after effects of the the Khmer Rouge and we came across reminders of that dreadful period throughout our trip., both people with terrible injuries and schools that had been used as detention camps.
I would say three days is minimum. We spent a week in Siem Reap but had a few days where we just went to the pool, relaxed, got lunch in town, etc. Most days we spent about half the day seeing the temples. We didn't see them all but saw most of what we wanted to see. You do get templed out after a bit.
I have nothing to add, but I love what autocorrect did to your post title. Now I'm imagining temples in the jungle full of robots and whirring machines ๐.
