Hi folks, considering a trip to Cuba. Has anyone traveled with Exodus Adventure Travels? Or, with another tour company you would recommend or not? Looks like some long driving days on tours. Any input appreciated.

I have not heard of that tour company. Are you wanting to join an organized tour or have a custom itinerary for independent travel done for you? If you want an organized tour, check out Road Scholar, they have tours to Cuba. If you want independent than check out Custom Latin travel.
In 2017 I took a tour similar to this one from Go Ahead Tours. It was fascinating and rewarding, with an American tour director and an excellent Cuban guide (who now lives in Arizona after a harrowing journey). There was a little beach time but most of it was about art, culture, history, and food. The hotels and food were very good. We had some long bus rides but spent most of our time in cities. I didn't feel like the bus time was excessive.
This was before the Trump administration further restricted travel to Cuba, but from the descrption of the tour currently offered it doesn't seem as if those restrictions made much difference. Note that your credit and debit cards won't work in Cuba. I converted euros from previous travel to "convertible Cuban pesos" (CUCs), the currency used for tourism. You'll need to see how to convert dollars if you want to do that. As I recall there were no meals "on your own" as tours to other places include, and very little "free time." This is an amazing, impoverished country with great people that remains a police state.
We took a 9-day Intrepid Tour "Hola Cuba" in 2017. It still looks the same now on their site. We loved it. It was very much like a RS tour. The guide was Cuban and used local guides at sites. We mostly stayed at privately run guesthouses. Yes, there is a lot of bus time. Vinales and Fusterlandia were our favorite places.
