I wish to visit Bethlehem and the Herodian this coming Saturday.
Is it possible (and safe) to hike from one to the other?
Is there a recommended guide who can meet me at the Israel crossing and accompany me to both places?

Are you staying in Jerusalem? You can take a bus or taxi from East Jerusalem to Bethlehem. There may be a direct route to Herodion, up and down the hills and through a couple Arab villages. Even if there's a reasonably direct route to walk from Bethlehem to Herodion, it's too far, and no one can ensure your safety. On Shabbat, the only way to get to Herodion from Jerusalem is by taxi or private car. BTW Herodion closes at 3 pm on Shabbat in winter.
AFAIK you won't be able to take a taxi from Bethlehem to Herodion, but maybe a taxi from East Jerusalem could take you to both if you negotiate a day trip.
