I am going on a cruise that is going to stop in several places in Iceland and Greenland. On my excursions will I need hiking shoes or will my Dansko Paisleys do? I plan on going on some excursions that will include a good bit of walking, but not sure how much will be on unlevel terrain.
I can not imagine any cruise excursion needing anything more than good walking shoes. Hiking shoes most likely would be overkill. You will probably have people going in sandals.

Also, a Swiss vlogger was mentioning that they frequently see people "hiking" in sneakers and sandals and know they are tourists.
I can't speak for Greenland, but for Iceland unless you are hiking you will be fine in regular shoes. On our summer trip, we did not even bother with bringing sandals and honestly, we never wished we had them, FWIW.
Where are you stopping in Iceland?
We are stopping for 1 1/2 days in Reykjavik, then Isafjordur and Akureyri.
Yes, regular shoes will be fine. I would not bother with sandals at all though for these stops.
