Hi, i will be travelling from Amsterdam - Ghent overnight. However i would like to stop past antwerp first briefly. Do i need to buy two tickets? eg. would my IC ticket cover two stops if i bought a ticket from Amsterdam to Ghent. Or do i have to buy two tickets ie. Amsterdam - Antwerp. And Antwerp - Ghent? Thank you.

There are no overnight trains on this route, the trip is too quick. Amsterdam to Antwerp is 1 hour 15 minutes, Antwerp to Ghent is one hour.
What do you mean "travelling from Amsterdam - Ghent overnight"? It's not a long distance and no way you can spend the night on a train. According to the Belgian rail site, the last train from Antwerp to Ghent (more direct and quicker than changing in Brussels) leaves at around 11:30 pm and arrives at around 12:30 am.
According to the Belgian rail website, a standard ticket for domestic travel does allow for breaks in your journey. Belgian domestic trains in general are not too concerned about you being on a specific journey. You shouldn't have problems if you go to Amsterdam to Antwerp by IC and then to Ghent by domestic train. I wouldn't try it if you wanted to go on to Brussels by Thalys, though.

Yes sorry didn't mean overnight on the train. And definitely will be visiting bruges as well from ghents.
Quick tip I forgot when you get the train from Antwerp - Ghent with an h is the English spelling, the local spelling you'll see on the train departure boards is "Gent".
