I'm a bit overwhelmed with the best train to book to travel from Bruges, Belgium to Amsterdam. I would like to find the most direct or only one train change - if that is possible.

The best you will get would be a single transfer at Brussels-Midi.
You will want to use the SNBC website

Pick whatever suits your schedule and time/price preferences.
Do not worry about transfers. They are a normal and expected feature of train travel. The trip planner will allow generous amounts of time to change trains.
