I was wondering if there are any great smaller cities (on train lines) that one could stay in, but be able to do day trips out? We have over a week in Belgium and have planned 4 nights in Bruges, but would like to also see smaller towns and do day trips or just chill... This is in October.

Leuven is nice, it is a college town
Mechelen is a nice, smallish historical city. Halfway between Antwerpen and Brussel it's a good base for visiting its larger neighbours, and pleasant to come back for an afternoon beer on the market square.
Do you want to experience Wallonia or do you want to stay in Flanders?
