Really Dumb Question about Waffles

I'd like to think I'm a pretty logical person; I'm a research nut and do the work before I ask. Therefore, I think I know the answer to this question, and the answer may be patently obvious once you're actually IN Belgium standing outside a waffle shop. Here's my question:

The array of waffles in all their varieties that you see on individual trays or on large platters spilling out of shop windows or stalls: are those simply to illustrate what's available? I'm assuming those are not the ones you eat. Is this correct?

Waffles are sold on the streets in some Belgian towns, in addition to shops. The vendor made my waffle as I watched.

Also be aware that in French speaking parts of Belgium such as Brussels, you may see the word "gaufre" instead of waffle. Be sure to try the more humble looking Liege waffle too. No fancy toppings, but it's dense and delicious.

At Desiré de Lille in Antwerp, I have also ordered fresh-fried Smoutebollen, which are like Quarkbollen in Germany. They are not like Donut Holes at all.

I must say, I've had fresh cooked waffles, as well as precooked waffles, and some of the pre-cooked ones have been really very good. The dense ones that are crispy and sugary, almost have a bit of a shortbread aspect to them. More of a handheld snack than a knife and fork waffle. I don't dislike those at all!
