I booked the "London St Pancras Int'l to Any Belgian Station" am under the impression I can get all the way to Ghent on this ticket.
I have an Eurostar ticket that reads "Any Belgian Station to London St Pancras Int'l". "08:52 > 09:57". Where do I get on to make to make the 08:52 train.
From any station in Belgium you would have to get to Brussels Midi and on the Eurostar train schedule to leave at 8:52 back to London

On the way there you get off the train at Brussels Midi and transfer to the trains going to Ghent.
The way you've typed your question makes it seem like you got a ticket going the wrong direction. I hope that's not the case.
Trains from Gent St Pieters station to Brussels Midi/South station take 30 minutes and run about 4x/hour. You must also check in for the Eurostar train at least 30 minutes in advance (with most Standard class tickets). I would board the train at Ghent no later than the 7:39 departure, and preferably earlier. (A Eurostar ticket is no good if you miss the scheduled departure from Brussels.)

There are times when 30 to 45 minutes check in in London works but I would never leave it as close as 30 - the minimum allowed. I was at St Pancras last week and saw that the check in queue had ELEVEN switchbacks in the rope. I'm always closer to an hour or so.If you get there and there is no queue you can always raid the Marks and Spencers for food and then get in the line.
