Does anyone know of a hotel in Brussels that has two double beds instead of a king and sleeper sofa/cot?

That's not a common configuration in Europe. I would suggest looking on booking.com for American hotel chains (for example, Marriott, Hilton). You might just find a quad room but it's likely to have a double bed and twin beds. I assume you just want to sleep 4 people in a room?
