Olivia, I haven't stayed here but Lybeer Travellers Hostel is seeing good reviews, and is very centrally located: 10 minute walk or so from the train station.

I have stayed at Lybeer Travellers' Hostel in Bruges. It is well-located to the sights (Bruges is pretty compact anyways) and about a 20 minute walk from the train station if you don't have a lot of luggage. I will say I stayed at Lybeer pre-renovations and found it to be not too clean and there was a lot of mold in my room and in the hallways. Hopefully that has been resolved with the renovations. No elevator and the stairs are a little steep, so pack light. They have a strict check-out time, but no place downstairs to lock up luggage if you aren't leaving Bruges right away after you check out - they put the luggage in a corner of the lobby, so make sure you have a lock on your suitcase or backpack if you have anything of value that you can't fit in your day pack and carry around with you until your train leaves (e.g., laptop, iPad).
I will say the night life in Bruges seemed a bit dull - especially for people in their 20s. You might want to consider staying someplace else - like Antwerp or Ghent - as a base and just train to Bruges for a day trip. The distances aren't that far and the cities are easily and cheaply connected with local commuter rail service.
