We will be in Ghent for 6 nights. Does anyone have a suggestion of where to stay? We are looking for a nice hotel or B&B that provides at least a continental breakfast and is close to the historical center and not far from the train station so we can day trip elsewhere fairly easily. Thanks!

I'm not sure of your budget, but I stayed at the Hotel Harmony - great location. It's a RS tour hotel as well. I can't remember how far from public transportation though. I think I just took a cab from the train station.
We stayed at the Carlton Hotel. It is about 400 yards from the train station but a very easy bus ride into town. The proprietors are two brothers who strive to provide the best for their guests. They will give you best directions, suggestions on places to see, things to do, Breakfast is outstanding, hot, well-prepared and with some items, made-to-order. Would stay here again.
The train station is not very close to the historic center, so you're going to have to decide which location you prefer. I would choose the historic center, which is much more charming and has many great restaurants and hotels, and take the tram to the station for day trips, but your travel style might be different.
With 6 nights, I would choose the train station vicinity. Note that you can use the same tram card in nearby cities other than Brussels.
We too stayed at hotel Harmony while in Ghent in 2018. It’s just under 2 miles from St. Pieter train station and a mile from the Daamport train station. We came into town at the St. Pieter station and took the number 1 tram (I believe) to Gravenstein castle. The hotel is a 2 minutes walk from the castle and facing the canal. I believe the breakfast buffet was included in the price and it was good. The breakfast room overlooks the canal so it was very relaxing.
There are many AirBNB’s in Ghent. I have also stayed at the Ghent Marriott, great hotel right in the historic city center on the river. I find their rates are all over the place, though. If Ghent has a convention or their film fest, $120/night rate goes to $300.
We had a great experience at the B&B Entrenous. It is very close to the railway station. It's a longish walk to the center, although we didn't think it too long. There is also a tram stop around the corner if you prefer.
