Which city to pick for a day trip from Paris in next couple days? We are traveling with young kids. Not interested in museums unless it’s kids specific. We love Christmas markets and local sights generally. Train ticket from Paris to Bruges / Brussels right now are about euro 100+ per head so also looking for alternate ways to get there.

To me, Brussels or Bruges are too far to go for a day trip even without kids along!
Since you are buying last minute any of the TGV (fast trains) will be expensive.
How about Vaux-le-Vicomte chateau even though it's not really a day trip? It's got a kids program and is decorated for Christmas. I've not been but hear it is fun.

The only option to my opinion is travelling with the Eurostar / TGV, but the ticket prices are as you already know way to high now for the next days.
Have visited Vaux-le-Vicomte two times but not during Christmas too. Nevertheless looks great this time of the year. Château de Chantilly north of Paris is also turned into a winter wonderland from November 30. Also well known as an Equistrian Center with daily demonstrations. Fairly easy to get to with the RER and additional bus. Worth combining with nearby Senlis. Think another place to consider as a daytrip.
