I'll be driving to Bruge in August and would just plan to leave the rental car at the station for our three night stay.
If I go to book in advance, they want vehicle info including the plate. I don't know this yet since I won't pick up the car until I arrive several days prior.
Can I just make up a plate number and edit my booking later?

Just do it when you pick up the rental car. My guess is it only takes a few minutes. I wouldn’t take a chance on entering information (make, model, plate number) you may not be able to change later.
While not for parking, we had to wait until we picked up the rental car in Madrid to register it for Portugal tolls. It only took a few minutes online.

Thanks for the replies. As mentioned, the OP (me) is home in chilly Minnesota.
But, this reminder does give me a chance to help out future travelers. We did book our stay in advance and I think I just made up a plate number. Their system does allow for you to go in and edit your reservation at which time you can add the plate number of your rental.
In fact, pulling into the car park in Bruges was one of the slickest parts of our entire trip. The camera read our plate number and said welcome and we were in.
