My wife and I will be staying near Paliseul, Belgium for one night next week. What are your recommendations for cultural and historical “must sees”? Any great places to eat? We will have a rental car, so we have some flexibility with times and locations.

Nice place just south of Paliseul is Bouillon, impressive medival castle and once home to Godfry of Bouillon, the first Latin ruler of Jerusalem during the first Crusade. East of it near Florenville the Abbey of Orval. There are some scenic routes, the local TI can tell you more.
