In many European countries, including Belgium, many museums are closed on Mondays. That's the only issue with your dates.
There are a few sites you can see on Mondays in those cities, particularly churches, but not most museums. Here's Rick's note regarding Monday options in Bruges: "Blue Monday: In Bruges, nearly all museums are open Tuesday through Sunday year-round from 9:30 to 17:00 and are closed on Monday. If you’re in Bruges on a Monday, the following attractions are open: bell-tower climb on the Markt, Begijnhof, De Halve Maan Brewery Tour, Basilica of the Holy Blood, City Hall’s Gothic Room, chocolate shops and museum, and Church of Our Lady. You can also join a boat, bus, or walking tour, or rent a bike and pedal into the countryside."
