Wachau Valley and Other Questions

Hello - I am going to Austria next week. One morning I plan to leave Vienna early and go to the Wachau Valley. I was planning on renting a car but really don't want to because everyone wants to have some wine. We are staying that night in Melk so I guess I could leave my car there. I'm now considering taking a train to Krems. I read about people riding bikes there but I can't use one of my hands. That prevents me from controlling the bike well enough to turn. That would turn out bad :). Are there any tandem bikes, rickshaws or anything else we might use?
2nd Group of Questions - From Melk we are going to Hallstatt and Salzburg. Once we leave Salzburg, we will have 6 more nights. We leave from Prague and plan to spend at least 3 nights there. We have been told that we should spend a night or take a day trip to Český Krumlov. We thought about taking a night train that goes directly from Salzburg to Budapest and staying two nights there but wonder if that is too crazy. Any other places we should go to that make better sense than Budapest? Are most people able to sleep very well? We have never been to Europe.

As far as the Wachau goes, you can get trains from Vienna to/from either Krems or Melk. A bus route runs between them which is hourly for most of the day and stops off at the villages. The last time I was there the buses were low-floor and accessible and I don't think it will have changed since. As long as you don't have so much wine that you piss off the other bus passengers or the driver, you don't need a car.
