The idea of the Vienna Woods has romantic connotations in my head, but I am not sure where from. What is there to see and do, and should we stay there overnight?
What notion is in your head? It’s a forest with walking trails. Nothing special, in my opinion.
We like to take the 38a bus to Kahlenberg and walk to Nussdorf. Other stadtwanderweg are in the city (google it) - these are marked trails in the Viennese suburbs.
We also go walking in the Lainzer Tiergarten, which is in Vienna and has the Hermesvilla.
Spending the night doesn’t make sense as you’re still in greater Vienna.

The Vienna Woods are an highland range of about 30 miles length, Vienna being at its northern end. A small part of it extends into the Vienna city (= Vienna state) area.

As correctly pointed out, your romantic connotations stem from the Strauss waltz. If you do go out to Kahlenberg, it's the battle site if you're interested in the city's history and that of modern Europe.
These days, however, Kahlenberg is better known for vineyards, forest walks and heurigen.
