We need to get from Vienna to Zurich at the end of our trip and we're looking into an overnight train. Do we need the Eurail pass or can we just get a point to point ticket?

You NEVER need a Eurail Pass. Eurail Passes are only sold outside Europe, and usually more expensive than advance purchase tickets.
What do you think the locals buy in order to travel, just normal tickets.

Are you looking at booking sleeping compartments or couchettes? Then yes, you must book ahead or they are likely to be sold out if you wait too long.
Yes, buy tickets in advance to get the cheapest fares and to ensure you can get the sleeping accomodation on the train that you want.
