For Vienna, I and another forum member recommend Gerhard Strassgschwandtner. So does Rick Steves in his Vienna/Salzburg guide book. Gerhard is genial, knowledgeable, and enthusiastic. I had a great walking tour with Brigitte Timmermann in 2004. She was heavily involved in researching the Third Man walk (I took one of the Jewish Vienna walks with her). She now has her own company, and it looks like she's gotten her whole family involved. I can only vouch for her - even all these years later, she was definitely one of the best tour guides I've ever had.
