Things to do and see in Hallstatt

Staying unfortunately for only one night so would be interested in what to see and do along with dining suggestions.

If you arrive by train, you'll get a view of the lake by boat as you arrive and depart to that train station. Main things to do include funicular up the hill, where you can visit the salt mine. In town, see the Catholic church and its bone chapel and wander the lanes and hillsides. Or a longer hike or lake swimming for the adventurous.

As I recall, there's also a small Museum in the main part of the town. The Salt Mine tour that Laura mentioned is definitely worthwhile, and after the tour you might consider stopping at Rudolfsturm (the large castle at the top of the Funicular) for a "cool one" and to enjoy the magnificent views.

"One might take a bus from Hallstatt (just climb the stairs to the bus stop)"

I took the bus from Bad Ischl to Lahn, and, although we went through the tunnel that bypasses Hallstatt, I don't recall the bus stopping at the "vestibule" above the town, but then I was the only one on the bus at the time and the driver knew I was going to Lahn). It's probably easier to walk the flat 1 km road along the lake south to Lahn to catch the bus rather than climbing the steep hill to the bus stop in the vestibule.

I did climb the steps to the vestibule to get a view of Hallstatt from above. IMO, the best thing to do in Hallstatt is just being there and enjoying the incredibly beautiful setting.

I agree with Lee, one of the most beautiful towns that I have been visited. It is especially great stop after or before the hustle and bustle of Salzburg or Munich. Aside from what the other posters suggested, my fondest memory is of kayaking on the lake.
