Do I need train reservations for these destinations or can I just buy the ticket at the station on that day? Since I'm just going to Christmas markets I wasn't sure of my itinerary.

You can buy tickets the same day, but buying tickets in advance will save you a bit of money.

You can use the Westbahn train from Salzburg to Vienna. They are frequent, just as fast as the Railjet trains and cheaper for last minute tickets at the station.

Regiojet has frequent service from Vienna to Prague, looking at tomorrow, all but one train has plenty of seats. Again, cheaper for last minute purchases.
