Salzberg to Amsterdam and roads in-between, need advice

HI< my wife and I are 73 and 63 and young at heart. We love Europe and so we are going in Sept for 2 weeks. We arrive in Vienna on Sept 16 for 5 nights then Halstatt for 2 nights. We fly home from Amsterdam on Oct 1st. So we have 8 days to fill in the blanks. We need some suggestions. on where to go and for how long.

her is what we were thinking.
We want to ride bikes for a few days. so we were thinking of Getting from Halstatt to Koblenz and ride the Mosel river for 3 - 4 days and then get to Amsterdam and stay for 2-3 nights.
we have never been to Germany .
Since We will have just spent 7 nights in Austria we were thinking of skipping Salzburg even though we have to go there no matter what we do because to get anywherel from Halsttat we have to take a Ferry across the lake from Hasltatt then get a Train or bus/ Getting to Munich isn't too bad maybe 4-5 hours. Frankfurt would be all day. As far as riding bikes we heard the Mosel is amazing. should we do 2 or 3 nights in Amsterdam?
We dont like moving around too much so going to one or two places is best. We don't need to go to castles or Churches or crowded museums. Really we we want to go bike riding in the country and see some small villages.

Don't skip Salzburg, and go out to Berchtesgaden. The scenery on the lake, Alps in the background, is fantastic, along with great hiking.
Are you biking along the river in Melk/Krems? Where will you be in Austria? Could you pls share the itinerary you have at this point?

we have ridden the Mosel from Metz France to Cochem. We skipped the last leg to Koblenz as that part I believe is on the road whereas the rest of the way is almost exclusively on paved paths. If you just want to bike for a few days I would suggest basing somewhere between Trier and Cochem to base yourself and spend a day riding in either direction.

Salzburg is also a very nice place to take a bike ride along the Salzach.

Head north to Passau and bike along the Danube.
