Granddaughter going to Europe in July (school trip - can't reschedule) & would like to see the Lipizzans perform in or around Vienna. According to the Spanish Riding School's website, there is no scheduled performances in July. Any suggestions on how we can see them in July?

I emailed SRS previously about July and August. Their answer was The horses take a break in July and August so no performances. There are no training sessions available for July. As a former dressage rider, this makes sense since horses need a vacation too. You can email SRS to see if there are guided tours of the stables since no schedule posted. https://www.srs.at/en/tickets-events/guided-tour-vienna/
Only other way to see the Lippizans in July, but not a performance, is to go to the Piper breeding farm outside of Graz. It's too far for a day trip.

In July the Lipizzans are in the Heldenberg training center, which is not far from Vienna and can be reached using public transport (train/bus).
On July 2nd there is a gala performance in Heldenberg. Get tickets as soon as possible in case you want to attend.
