Our family of 4 (2 adults, 2 teens) will be flying from London Stansted to Vienna and our arrival time in VIE is 23:05. I was planning on taking the train/subway to our hotel near Schillerpark, but am wondering if by the time we go through immigration etc if we will be cutting it a bit close to the last trains available, especially if our flight ends up being late. Would any of you more familiar to that airport know how long it might take us? Should we arrange a taxi pick up instead at that hour?

As the last train departs at 12:18am from the airport I would suggest to take a taxi. Given that you are 4 people the price difference is only €15. Make sure that you book the taxi in advance with a confirmed flat fare (about €30).

The Eurowings fare was such a good deal, but I didn't think through all the logistics until now. In general is immigration/customs pretty quick at VIE? And I'll most likely book a taxi as has been recommended.
