Stiftskeller is still a favorite of locals for traditional fare. Seems like a tourist spot (and somewhat is) but it is a hangout for locals as well. Fischerhausl is a good choice as well for dining. Goldener Adler is a fine choice as well. We have never used a guide here as it is pretty compact as far as all the major points of interest are involved and have found this to be a great starting point: https://www.innsbruck.info/en/ for information and education on sites in the town. Some of their blogs on that site could point you in the right direction regarding a private guide.

I usually stop in at Altstadt-Schmankerl for lunch when in Innsbruck. I like to visit the Markthalle Innsbruck too. Take a look in the Jesuitenkirche Innsbruck. The Hungerburgbahn is fun.
