We'll be in Innsbruck in September for 2 1/2 days, and then going back to Rome to fly home to the states. What are the best highlights to do/see there, and what is the best option for travelling from Innsbruck to Rome? We like hiking, scenic views, the picturesque small village towns & good restaurants.
When in September? A lot of cattle drives are held that month. I went to one in Mutters a few years ago.
Here is a pretty long list. Innsbruck is in Tirol. Myself, I am tempted by the goat drives in Mittenwald.

There is no direct flight between Innsbruck and Rome.
So you have the choice between train and bus.
Trains from Innsbruck to Rome depart at 9:24am and 11:24am (one change in Bologna), travel time about 7 hours. (Other departure times don't look feasible for you.)
There are different bus connections (travel time between 11 and 13 hours), they are the cheapest choice. The fastest bus connection (10:20 hours) is the night bus (departure 11:35pm).
Looks like the best way to get from Innsbruck to Rome would be to take train to Munich (1 hr48min) $14/ea, then take a flight from Munich to Rome (1 1/2 hour) $80 or less per ticket. Anyone else see a better way?
It depends on how much time you have. If you have time, you may wish to consider the train from Innsbruck to Verona and then flying from there to Rome. I don't have specifics, but Rome2Rio shows a flight. Are you wed to Innsbruck? If you choose to travel farther south on the train in the direction of Verona, you might opt for Bolzano instead of Innsbruck. It is on the same train route.
I have visited both Innsbruck and Bolzano about the same number of times and think I prefer Bolzano. Just an idea...
