If you'll need perhaps 10 rooms, then start with larger hotels. Rick's guidebook recommendations do specify the total number of rooms each hotel has. For instance, Hotel Schweizerhof (near St. Stephen's) has 55 and Hotel Ibis Wien (near West Bahnhof) has 341.

I have organized stays for groups at the Renaissance Imperial Riding School Hotel. Large, but historical, building. Excellent breakfast and an indoor swimming pool. Nice executive club. Easy access to center on Tram 71 or by foot.
