We will be in Vienna for 3 days visiting family. We would love to find something fun for our 11 and 14 year old daughters to do with us (or alone with us supervising). We will do a family cooking class in Salzburg and we're looking for something like this for our girls. After visiting with family for 2 weeks, and likely doing a lot of historical deep dives, we are trying to sprinkle in some kid/ teen fun here and there.

Based on your other posts, I assume you are visiting in July? I also have teens - here are a couple of ideas.
If you're doing something related to cooking in Salzburg, then maybe something active in Vienna? How about a high ropes course on top of the largest hill overlooking Vienna? The area is beautiful and there is a nice hike you can take down the hill (Kahlenberg) through vineyards. https://waldseilpark.erlebniswelt-kahlenberg.at/en_us/
It will also likely be very hot in July, so maybe something in the water? Consider renting a small motorboat and let you kids drive it through the Alte Donau, an old arm of the Danube that is now a beautiful recreational area with nostalgia.
