Our river cruise ends in Linz on Saturday and we spend the night in Munich then fly home the next day. Do you have any suggestions for our Saturday. Taking the train, stopping in Salzburg and riding the Untersberg is the best idea I have seen so far? I think doing something in the mountains would add something to the trip?

I suggest visiting Salzburg. Linz to Munich is too far to go back and forth. plus you would have to transfer in Salzburg.
I'd stay in Linz. There are some interesting museums, and the Postlingbergbahn, one of the world's steepest electric railways up into the hills near the centre.
I think people are not understanding your situation. You need to be in Munich on Sunday for a return flight. You are asking what to do from Saturday morning until Sunday flight time. Staying in Linz would be silly. I think your idea of spending a few hours in Salzburg makes sense before heading to Munich for Saturday night.
