I see there are several options. Which is best and quickest train to go from Vienna to Hallstatt?

All trains to Hallstatt depart from Attnang-Puchheim. So you have one change here, no matter what train you take from Vienna.
The travel time also depends from what train station in Vienna you want to depart from. As far as I know the quickest connection is 3:18 hours.

Enter for departure station e.g. "Wien Hbf" (main train station) or any other major train station in Vienna
Enter for destination "Hallstatt Bahnhst" (train stop)
Click on "more" and set the number of allowed changes to 1 to avoid unreasonable connections.
Click on "search connection".
