We'd like to spend one night on our way between Salzburg and Vienna in January. We'll have a car. We definitely plan to visit Melk but wondering if folks think that's a good spot for an overnight, or if other hotels/towns/villages are more appealing?
We need an easy place to eat dinner and breakfast, whether in the hotel/pension etc. or walking/short driving distance. A pretty location would be best of course! Thank you in advance!

No need to sleep in Melk since it's an easy day trip from Vienna by direct train (1h). If you have an extra day take a day trip to Bratislava's old town that's also a direct train ride from Vienna (1h).
You can also take a direct train from Salzburg Hbf to Vienna (2h 30m).
A village in January? What would you do?
Just get on to Vienna at that time of year. I recommend the train over a car as well.
If you insist on overnighting, then Melk is the only logical place as the attraction is indoors.
