I was wondering whether to include the ice caves in Werfen or Dachstein in my trip? I will be visiting both Hallstatt and Salzburg and am therefore not worried about which one will be closer to get to. Also I will be driving so public transport access shouldn't matter.

I haven't been to either, but I would give Werfen the nod simply because it also has the fantastic Hohenwerfen fortress.

It has been many years since I visited the "World's largest ice cave" near Werfen. Since I had been ill, the MANY stairs were not a good idea. For strong walkers, I'd recommend it.

Dachstein ice caves can be visited from Obertraun, a short bus trip (or drive) around the end of the lake from Lahn, a half kilometer from Hallstatt. Werfen is a half hour or more from Salzburg.
The lift that takes you to the Dachstein caves is a short distance from the Obertraun Bahnhof, and the base station is on the bus route from Lahn. It's a walk from the Werfen Bahnhof to the ice caves.
My vote for accessibility goes to the Dachstein caves.
